This weekend has been full of so many unexpected surprises, the greatest of them being the ice storm that came and took over our city! Burrrr :) I wasn’t prepared for what I saw, and to top it off, I was caught totally unprepared when it came to stocking my refrigerator with the food I would need to be locked in my house for the whole weekend. (Both work and church were canceled.)
By the time Sunday rolled around I had devoured most of my “ready to eat” food, and with only a limited number of supplies preparing a meal seemed like a stretch. First, my selection didn’t include much that I could honestly say I wanted. LOL. Second, although I had things I could make, it seemed like I was out of ALMOST ALL of the major ingredients needed to COMPLETE a meal. (LOL, Coconut milk, no cereal).
Upon looking closer, I realized that I had three Portobello mushrooms in the refrigerator, some scallions, tomatoes, 100% whole grain bread, and veggies! Maybe I could make something work! :) I immediately broke out my cookbook and found a recipe for Grilled Portobello mushroom burgers!
With the recipe in hand, I was ready to make it happen! :) Here’s my BIRTHDAY GRILL CHALLENGE! :)
Grilling in the cold was no joke. It took my grill quite some time to warm up to the optimum temperature. I used the extra time to marinate my Portobello mushrooms in a little olive oil, garlic, soy sauce, fresh thyme, and a balsamic vinegar mixture! :) I altered my recipe slightly to my needs, the recipe served 4, but I only had three large mushrooms, so I decreased the ingredients to my liking.
Here’s my experience!
In the aluminum foil: squash, zucchini, broccoli, carrots and cauliflower. The grill was set at 400 degrees and I left the mushrooms on for a total of about 5 minutes, being sure every two minutes to turn the mushrooms over. The tomatoes don’t take nearly as long. Placing them on the rack can be a little messy because they tend to stick to the rack. They turned out great.
Olive oil, fresh thyme leaves, balsamic vinegar, garlic (powder) , and soy marinade
Here are my marinated mushrooms! Marinate at least 30 minutes. I got a plastic zip lock bag and placed my ingredients in the bag to let them soak just enough to keep them wet. After you remove them from the marinade be sure to season with salt and pepper.
Place inside foil and place on the grill for about 20 minutes or until soft. Season to taste.
Grilled tomatoes have a tendency to turn a little gushy like stewed tomatoes once grilled. I enjoyed mine, but some may prefer fresh-cut non-grilled tomatoes.
As you can see, I toasted both sides of my bun by placing them on the grill for about a minute. My grill was set at 400 degrees, so be sure not to leave them on too long. I topped mine with scallions, tomatoes, and a leafy green. I chose Kale. Although most do not eat Kale raw, I do :) It’s a SUPERFOOD so it’s packed with nutrients! :) The recipe called for cheese, but as you can see I opted out, but some may enjoy it. It also had a spread that was amazing, I decreased the ingredient amounts drastically, just for health reasons. I added a dab of mayo, a dab of spicy mustard, a little regular mustard, and some fresh basil. Delicious :)

Ladies, you all have noooooooooo idea how much I loved the taste of this burger in my mouth :) Gosh, it was wonderful and knowing I MADE IT MYSELF made me feel so good! I didn’t give in like I wanted to and eat a whole bunch of unhealthy stuff like cookies and chips to fill my belly, I actually took the time to MAKE A MEAL, a semi-healthy one at that! :) Gosh, not much could wipe the smile off my face after this feat :)
I learned so much from this cooking session! It’s amazing how God just shows up and drops some extra wisdom, knowledge, inspiration, and motivation, on you out of NOWHERE :) I love him! He’s amazing :)
HERE IS MY LIFE/COOKING LESSON: You/me/we have enough. We ALL have enough. As I get a little closer to age 30, I start to think about all the goals I kind of thought I would have already achieved. I mean years ago when I thought about 30, I thought I would have a house, be married, have an AMAZING WONDERFUL AWESOME career, more money, etc.! Although those things may not be seen in the physical, I’m resting assured that God has everything cooking :) I’m in preparation. Now before you get all upset and feel like “where you are” has got to change immediately, here is the meaning: having enough doesn’t mean that GOD has you STUCK with the LITTLE that you have, but it DOES mean that He has equipped you with the necessary tools and ingredients for Him to WHIP UP something beautiful and totally delicious in ALL OF OUR LIVES! :) With all my looking and searching, God allowed me to SEE everything I really had. I looked in the refrigerator like 5 times and NEVER saw the mushrooms sitting right up front. I stood right in front of the refrigerator door and said in a joking voice “Jesus, help a sister out!” LOL. And then it all came to me! Life is the same way. We have no idea all the great skill, talent, greatness that we posses. God is making you into a wonderful masterpiece, we just can’t always comprehend everything He’s working out, all the doors He’s opening, how He’s moving you around to give you understanding, skill and experience, trust, faithfulness, dependence and reliance on Him, joy, contentment, and undeniable peace in knowing He is taking care of it all.
If we take the little ingredients (talents) that we’ve been given, read the recipe (The Bible) and follow its instruction, & BELIEVE ENOUGH TO CONTINUE IN THE GOOD WORK, God WILL bless you to have something WONDERFUL :) I remember when I was in search for something to eat inside my house and it seemed like NOTHING was going to work. Cookies were insufficient for a meal! Know that God is making a way, supplying your needs, hearing your prayers, and answering even your deepest desires. Remember: follow God’s instruction & BELIEVE ENOUGH TO CONTINUE IN THE GOOD WORK. God WILL bless you to have something WONDERFUL. (Yes, I’m totally talking to myself.)
His word declares it in James 1:22-25: “22 But be doers of the word, and not hearers only, deceiving yourselves. 23 For if anyone is a hearer of the word and not a doer, he is like a man observing his natural face in a mirror; 24 for he observes himself, goes away, and immediately forgets what kind of man he was. 25 But he who looks into the perfect law of liberty and continues in it, and is not a forgetful hearer but a doer of the work, this one will be blessed in what he does.”
